
Where it all started!

Hello! My name is Cameron LaVallie and I own and operate LA VALLIE ROASTERY (which is now The Peace Gov. | LaVallie Roasters & Co.) with my wife, Elena, here in Fort Worth, Texas. Truly, coffee is about the experience for us! From enjoying cappuccinos in cafes throughout Europe to being gathered around the table with our family and friends, there is just nothing like a quality cup of coffee.
The thought never crossed our minds to become roasters until our time in northern California. We had a wonderful neighbor welcome us to community with a bag of their personally home roasted coffee. Our paradigm for “great coffee” changed the moment we experienced "specialty coffee."
So, what's this specialty coffee about? Specialty coffee is grown differently, sourced differently, and by nature has higher levels of green coffee quality than the average "industrial/commercial coffee."
After moving away from California we found ourselves in Texas, missing our friends’ coffee. The desire, to roast beans for myself, began to grow. I just wanted a great tasting cup of coffee for our own enjoyment and the pleasure of offering a cup to those who join us around our table. So, I bought a drum roaster and I asked my old neighbor for his coffee sources.
After my first purchase of green specialty coffee, I was on my way to roasting, with a lot to learn. Through trial and error and a lot of research, I was finally dialing in my preferences and enjoying the fruit of my labor. Elena started learning and roasting with me as well!
At gatherings we began sharing our coffee with friends and family. They, in turn, encouraged us to pursue something greater than just roasting for our own pleasure. This encouragement eventually led to the birth of LA VALLIE ROASTERY which we have now rebranded to The Peace Gov. | LaVallie Roasters & Co.
